Rio Mambo changeing. I went to this restaurant the day it opened in 1999. We did my mother in laws birthday here. My wife and I became weekly regulars. We knew most of the staff and we always left satisfied. The food was great and service made you feel very important. I noticed everybody was treated this way. Later Brent Johnson "the owner "opened the colleyville location. Brent was gone more and more overseeing the other location. As time went on he was gone all the time. The Fort Worth location started going down hill from there. The service is lacking and it seems they didn't care as much. I have been back about a half dozen times since then. I went again tonight. I'm sorry to say I will probably not frequent it again. We had been there about ten minutes and there was only maybe five other tables occupied. We had to ask for some chips and salsa. They checked on me once during my dining and this was to ask if I wanted desert? It disappoints us knowing the way it was and the way it is now. I guess when you start expanding your business, then the service has to suffer.

Brent Johnson will need to really look at this location if he plans to keep regulars coming in. This is only my opinion.Thank you for allowing me to express it.

YOU WON'T REGRET IT!. I flew from California to Texas to visit family and dined at this restaurant. When I returned home, I told my husband "Eating at Rio Mambo's was worth the entire price of the airline ticket!" The food is unbelievable, the service is impeccable and the prices are very fair -- you just can't beat the quality of food served. Everything is freshly prepared and appears before you in the blink of an eye. The staff is friendly, attentive and treats even "first-timers" like regulars. Best margaritas around. If you are looking for a quiet, cozy, romantic spot, this isn't the place. If you're looking for lively fun and great food for the whole family or a group event, treat yourself to Rio Mambo's-- you won't regret it!

What's not to like?. Went to rio Mambo's with a VERY large group for a celebration. We were given what I can only describe as nearly embarrassing attention. Owner Brent Johnson saw that we got complimentary cocktails and hor d'ouvres while we waited, because the place was jammed with apparently ecstatic people. We were soon to find out why. Once seated we began with the freshly made chips and absolutely fresh salsa. And the TEXAS SIZED Margaritas, unlike any Margarita Ive had (and I consider myself something of a connoisseur). I think there wasnt a dish on the menu our group didnt sample, and there was not ONE unhappy person. When I inquired as to why my tacos al carbone were so unbelievable, I was told that it was because they were made using RIB EYE steak! Rule for Rio Mambos: everything fresh, everything top of the line. Go eat here.
